A fresh Homemade Sauce (and never from a jar) made from Red Onion, Cherry Tomatos and Fresh Basil leaves. Simple as it seems.

Following the Roman Tradion, this Sauce is slow-cooked in a rustic Terracotta pot and made from Just 2 ingredients:

Guanciale Romano DOP ( Cured Pork Chicks) and Fresh Tomatoes.

Here a variation from South Italy of the classic Amatriciana.

Made From Red Onions, Fresh Cherry Tomatoes, Chunky Pork Belly slaw cooked and Fresh Basil.  

It seems to me that this Sauce is Born to hug a full plate of Gnocchi.

Tip: Top it with fresh chilly for a full Calabrian experience.

Born from Red Onions and Garlic soffrito, Cherry Tomatoes, Anchovies, Capers, Green and Black Olives Tapenade, finished with a handful of Basil Leaves.
